Founded in the Genroku era (around 1695), the company still insists on handmade products and wooden tools made of Yoshino cedar.The soaking vats, steamer, and warming barrels are also made of wood. They stay overnight in the middle of winter, in the snowy mountains of Yamagata, and make koji by transshipment by hand many times using traditional noodle lids. A pure rice brewery that honestly puts time and effort into sake brewing in a storehouse surrounded by the fragrance of wood, a nationally designated cultural property.
