Ochi Shuzoujou

In 1893 (Meiji 26), in Shimoazae, Maniwa City, Okayama Prefecture (formerly Hokubo Town in Jobo District), Shintaro Ochi, the first-generation founder, established a sake brewing business in pursuit of high-quality water. This area of Hokubo has long flourished as a hub connecting the regions of Bichu and Mimasaka (and was also an enclave of Kameyama Domain in Ise, Mie Prefecture).The surroundings of the brewery are steeped in history and natural beauty. Nearby are significant archaeological sites, such as the Arakiyama Burial Mound from the 3rd to 4th centuries and the Ohya No. 1 Burial Mound and Sadakita Burial Mound from the late 7th century, both designated as National Historic Sites. The area is also home to numerous natural wonders, including the Kanachiana and Suwa no Ana caves in Maniwa City, as well as Makido and Ikurado caves in Niimi City, which are designated as Okayama Prefecture Natural Monuments.Behind the brewery flows the Bichu River, a tributary of the Asahikawa River, where visitors can witness a spectacular display of fireflies (Genji, Heike, and Hime fireflies) over a stretch of 5 kilometers from late May to June. Surrounded by such rich nature, the brewery is nestled in a truly remarkable environment.[Brewery's Philosophy]At the heart of our brewing philosophy is the use of rice grown exclusively in Okayama Prefecture and the challenge of creating sake that fully utilizes the unique characteristics of natural medium-hard water. This water, sourced from the karst terrain feeding Suwa no Ana and Makido caves, is rich in calcium, magnesium, and phosphorus.We embrace the philosophy of "never cutting corners," inheriting the meticulous craftsmanship passed down from previous generations. By deeply reflecting the soil and natural environment of our brewery’s locale, we strive to create sake that can only be made here. Our guiding principle is to continually refine our individuality and dedicate ourselves to enhancing the quality of our sake.
