Founded in 1833. Seisen's representative brand is sake carefully brewed with water from the mountains behind the brewery (designated as Niigata Prefecture's famous water) and the traditional techniques of the Echigo chief sake maker, based on the principle that sake is created by the local rice, water, human kindness, and nature. Among them, Junmai Daiginjo "Kame-no-o" is brewed with "Kame-no-o" rice, which is a phantom rice that ceased to exist before World War II, and which was revived and home-grown over a period of three years in 1980 from a mere 1500 seeds (the first postwar brewery to do so).This episode became the motif for the manga "Natsuko-no-Sake," which was later dramatized for TV and broadcast overseas.
