Founded in 1550 in Itami, the birthplace of sake. The first generation of the Konishi family started sake brewing while working in the medicine business.While carrying a barrel of sake on the back of a horse to Edo, the second generation Muneie was impressed by the nobility of the snow on the top of Mt. Fuji, he named "shirayuki".Itami has long been at the intersection of the Saigoku Kaido and Arima Roads, and sake brewing has flourished in the area due to the climate and the high-quality subsoil water from the Rokko Nagao Mountains.Clear sake from nigorizake is born in this area,also "Itami Morohaku", made with rice that was sparingly polished for both koji rice and kake rice, became a well-known sake in Edo (present-day Tokyo)."Itami Morohaku" has been recognized as a Japanese Heritage as a story of the Edo period. Although the brewery is not open to the public, visitors are free to tour the second floor of the Hakusetsu Brewery Village Longevity Storehouse, a renovated Edo Period sake brewery, where sake brewing tools are on display.
