In 1906 (Meiji 39), Tahee Saito, the head of the Saito family, began brewing sake. During a prayer ceremony for the success of his brewing, the morning star was reflected through a sacred mirror onto a sake-filled issho masu (traditional wooden square cup). Taking this as a good omen, he named the brewery Kakuboshi (“Square Star”).Following the damage to the brewery caused by the Great East Japan Earthquake on March 11, 2011, the new Hakusan Brewery was established in August 2021.The Hakusan Brewery was built on the former site of Hakusan Elementary School. While the exterior retains the nostalgic appearance of the old school, the brewing equipment and machinery were completely updated. Additionally, new facilities for fruit wine production were installed. Currently, the brewery produces sake, liqueurs, and fruit wines. Same-day service is not available.
