Akitsu Town, where our brewery is located, is a small port town facing the serene and beautiful Seto Inland Sea. It is also known as the birthplace of ginjo sake, thanks to the development of the "soft water brewing method" by Miura Senzaburo, who named our sake brand.At Fukucho, we hold Miura’s words, “Hundreds of trials, thousands of revisions,” close to our hearts. While respecting the long-standing traditions of ginjo sake, we are also embracing innovative approaches to expand the world of sake. These include reviving the extinct native rice variety Hattanso and utilizing white koji and Satake’s “Shingin” rice polishing technology.
