During the Genbun era (1736–1741), the first-generation Komai Shozaburo set out from the Omi Province with lofty ambitions, eventually finding his path in sake brewing in the land of Mutsu. The brewery officially began its operations in An'ei 4 (1775) and is set to celebrate its 250th anniversary in 2025.All rice used in brewing is sourced exclusively from Aomori Prefecture, paired with the region’s original yeast strains. The brewing water is drawn from the renowned spring in the Kanisawa district of Hachinohe, ensuring the creation of an authentic local sake.In 2021, the brewery was ranked first among 643 breweries in the global sake brewery rankings. While honoring its long-standing traditions, the brewery embraces innovation to adapt to the times, continually challenging itself to create new possibilities.
